Ingredients
2 cucumbers, ends trimmed
1 cup hummus
½ cup red or orange bell pepper, finely chopped
½ cup green onions, finely chopped (optional)
Directions
- Slice the cucumbers into ¼-inch-thick rounds.
- Spoon ½ teaspoon of hummus onto each cucumber slice.
- Sprinkle the tops with the bell pepper and onion (if using).
Makes 15 to 20 servings
